Take sufficient very White frizzy endive to constitute half the required amount of finished salad; the other half is made up of equal quantities of sliced peeled tomatoes, sliced raw artichoke bottoms, skinned green pimentos cut into short Julienne and sliced cooked egg white. Sprinkle well with sieved hard-boiled egg yolks.
Dressing: oil and vinegar, fairly well flavoured with mustard.
