Russian Salad

Method

Take equal quantities of carrot, turnips, potato, truffle, French beans, cooked mushrooms, salt ox tongue or lean ham, lobster, gherkins, smoked sausage and anchovy fillets—all cut into dice or Julienne, peas and capers.

Mix with Sauce Mayonnaise, arrange in a salad bowl and decorate with any suitable items from the salad plus beetroot and caviare.
