Method

Arrange some quarters of apple poached in vanilla-flavoured syrup on a base of Rice Croquette mixture. Instead of the rice, a base of apples cooked as for Apple Charlotte may be used.

Cover with ordinary meringue smoothing it dome shape or in the form of a Charlotte; decorate with some of the same meringue using a piping bag and tube. Dredge with icing sugar and colour in a moderate oven.
