4649 Fraises à la Ritz

Method

Arrange some chilled sweetened strawberries in a timbale and cover with the following mixture: pass 250 g (9 oz) wild strawberries through a sieve, add sufficient Sauce Melba to give a nice pink colour then mix in an equal amount of stiffly whipped Crème Chantilly flavoured with vanilla.

Chill well before serving.
