Mash 3 small fresh, Gervais cream cheeses in a bowl with a wooden spoon. Mix in the same amount of fresh thick cream, 3tbscaster sugar and 3tbspurée of wild strawberries. If the colour of this mixture is not sufficiently pink a few drops of red colour may be added. It may be flavoured to choice with vanilla, Kirsch or grated orange zest.
Sandwich the mixture between nice dry meringueshells.
