4723 Ordinary Ice-Cream

Method

Mix together in a basin 300 g (11 oz) caster sugar and 10 egg yolks until the mixture becomes thick and white. Gradually mix in 1 litre (14 pt or U.S. cups) boiling milk, place over gentle heat and cook until the mixture coats the spoon well; stir continuously and prevent it from boiling which would cause the mixture to break down.

Pass the mixture through a fine strainer into a basin and stir occasionally until it is completely cold.
