Method

Mix together as a paste, 500 g (1 lb 2 oz) flour, 150 g (5 oz) butter, 300 g (11 oz) very ripe Brie cheese without any rind, 4 egg yolks and season with salt, Cayenne and grated nutmeg. Allow the paste to rest before rolling it out 7–8 mm (⅓ in) thick.

Cut out rounds with a fancy cutter 6 cm (2½ in) in diameter, brush the tops with milk, mark with the prongs of a fork and bake in a moderate oven.
