Of all the vegetables we use in pies, eggplants are the tastiest. But in modern Greek cooking, eggplant pie seems to be forgotten. The recipe that follows is my own, inspired by two different recipes: a Melintzanopita from Thessaly that is flavored with ground cumin and contains sweet trahana, or rice and 3 or 4 eggs; and an eggplant pie from Kozane, which contains no eggs or trahana but has coarsely ground walnuts.
