The traditional phyllo made by the women of Metsovo contains only flour and water and a very small amount of olive oil. Seeing these women making the paper-thin pastry with their long, thin rolling pins, one would think that there is nothing to it. But that is hardly the case. You must be very nimble-fingered and need lots of practice to be able to achieve the perfect phyllo. So here is an easy alternative.
