Spread unsalted skinned peanuts over a roasting tin and roast in a 200°C/400°F/Gas 6 oven for about 10 minutes, shaking the tin occasionally to turn them, until golden all over. Once cooled a bit, crush them in a mortar. They’ll keep like this sealed in a tub for a good month, so make extra if you make lots of South-East Asiany things.
