I love crumbed food. One of my fondest childhood memories is of Mum’s crumbed lamb cutlets, served with home-made mint sauce. There were always mounds of the stuff growing around the garden tap. These days, Sam makes us crumbed veal cutlets when we want a real down-home-on-the-range kind of meal. This is, of course, a much more sophisticated dish than my childhood favourite.
