Bread Spice Mix

GREEK BREADS are usually seasoned with aniseeds, mahlep and mastic. It is very convenient to have a ground mixture of these spices ready for use in the freezer. Mixed with the sugar, mahlep and aniseeds, mastic can be ground in an electric spice grinder; if you try to grind it by itself, the heat may make the mastic stick to the blades.


  • tablespoons aniseeds
  • tablespoons mahlep (see Sources)
  • 1 tablespoon mastic (see Sources)
  • 2 tablespoons sugar


In an electric spice grinder, a clean coffee grinder or a mortar, grind all the ingredients to a fine powder. Transfer to a jar and keep in the freezer for up to 6 months.
