COOKING meat with dried fruits and nuts brings to mind medieval or ancient dishes that have survived in North African cuisine. In this recipe from Syros, ground almonds, walnuts and pine nuts are mixed with ground meat and shaped into oblong rolls. The rolls are baked in a flavorful red-wine-and-vinegar broth, together with walnut-stuffed pitted prunes. The resulting sweet-and-sour combination can be set off by mashed potatoes, french fries or any kind of egg pasta.
