Braised Pork with Celery


In the winter, a similar meat and vegetable dish is made using large celery root, peeled and sliced, along with bunches of the wild celery that is common in Greece and the rest of the Mediterranean. This fragrant celery can be found in Asian markets under the name kun choi or kin tsai, or sometimes, chinese celery.

Substitute 4 halved celery hearts for the artichokes and cook as directed.
