  • 12 cloves garlic, unpeeled
  • 1 sprig thyme
  • 50 ml/2 floz/¼ cup olive oil
  • 25 g/1 oz/2 tbsp sea salt


    Heat the oven to 180°C/350°F/Gas 4. Put all the ingredients on a 30 cm/12 in square of foil and fold to make a parcel, ensuring the edges are well sealed.

    Bake for 25 minutes or until the cloves are soft. Remove the garlic from the foil and keep warm until service, or cool and then store in an airtight container for up to 2 days.
