Ingredients

  • grated zest of ½ blood orange
  • 90 g/ oz unsalted butte

Method

  1. Beat together the orange zest, butter, salt, sugar, ground almonds and egg in a bowl until light and fluffy, then sift in the flour and fold through. As soon as the dough is formed, stop! You don’t want to work this pastry at all.
  2. Wrap the pastry in cling film (plastic wrap) and put in the refrigerator for 20 minutes, then bake as directed in the recipe.
