Ingredients

  • 3 lbs tender beef
  • ½ spoon butter
  • ½ lb boiled ham
  • ¼ lb pork fat or butter
  • 6 eggs
  • green onions
  • salt and pepper
  • Strong sauce

Method

Prepare an omelet from 6 eggs and boiled chopped ham, green onions, and butter. Lightly beat a tender piece of beef chuck with a rolling pin into a large thin cutlet, sprinkle with salt and pepper, and arrange the omelet on top. Roll up the meat to resemble an oblong bun, surround with small slices of pork fat or bits of butter, and place in the oven. To serve, slice and pour over Strong sauce.
