Ingredients

  • hare
  • ¼ lb butter
  • ½ glass sour cream
  • vinegar
  • ¼ lb pork fat
  • creamed beets

Method

Lard a cleaned hare with pork fat, strew with salt, and place on a dripping pan. Cover with lumps of butter. When the hare is half cooked, begin to pour on sour cream. Cook until tender, cut into sections, and pour on the sauce. Usually creamed beets are served with this hare.
