1168 Smolensk buckwheat pudding with apples and jam

  • 3 glasses milk
  • 1 glass Smolensk buckwheat
  • 6 eggs
  • ½ glass sugar
  • 2–3 apples
  • ½ glass jam
  • 2 rusks
  • (syrup or ingredients for sauce)


Bring 3 glasses milk to a boil and pour in 1 glass Smolensk buckwheat, stirring. When the mixture thickens, cool and beat in 6 egg yolks. Add ½ spoon unsalted butter, 1 spoon sugar, and, finally, 6 beaten egg whites. Mix everything together. Grease a mold and add a layer of kasha, spread with jam, top with another layer of kasha, and cover with chopped apples. Sprinkle the layers with sugar, etc.

Steam the pudding. To serve, pour on syrup or sweet sauce.
