Ingredients

  • 1 glass flour
  • 4 eggs
  • 2 spoons sugar
  • a little cinnamon
  • 1 glass milk or wine
  • 1 lb butter

Method

Make a liquid batter by mixing 1 glass dry flour, 2 spoons sugar, and a little cinnamon with 1 glass milk or a little more. Stir in 4 egg yolks and 4 beaten egg whites. Using a small funnel, swirl the dough into boiling fat in threads in various directions to form a net of straws. Brown on both sides and turn into a sieve* lined with blotting paper. Serve hot and sprinkle on sugar or juice.

*Molokhovets used the classic European drum sieves with a level surface of horsehair or wire held within a tally thin wooden rim. Lining these wide, flat sieves with blotting paper made them ideal for draining, whereas our own concave wire nets attached to a metal rim hardly serve the purpose at all.
