Ingredients

  • 2 glasses cream
  • 3–4 egg yolks
  • lb, or 1 full glass, sugar
  • 1 lb, or 2½–3 glasses raspberries or wild or cultivated strawberries
  • 3 lbs, or 6 glasses, salt

Method

Combine 2 glasses cream with egg yolks beaten with sugar until white and stir on top of the stove until the mixture thickens. Remove from the stove and cool, stirring. Add 1 glass puréed, fresh [uncooked] cultivated or wild strawberries or raspberries, mix everything together, and strain into a mold, etc.
