1488 Jelly from apple skins

  • 10 apples
  • vanilla bean
  • 10–12 zolotniki isinglass
  • ¾ lb sugar


Wipe off thoroughly and peel 10 fresh, fragrant, sour apples. Use the fruit for apple compote and prepare the following jelly base from the peels. Place the peels in a saucepan, cover with 3 glasses water, add ¾ lb sugar and 1 vershok vanilla bean, and boil thoroughly. Add ½ glass isinglass prepared from 10 zolotniki isin-glass and clarify with egg whites or paper as indicated in the remarks. Reduce to 4 glasses, strain, and chill.
