[Mix together] 2¼ glasses sieved flour, 3½ eggs, ½ lb butter, ¼ lb, or ½ glass, sugar, and a little water. Knead as well as possible, roll out thinly, and surround with a rim of the same dough. Place on a baking sheet dusted with flour, paint the top with egg, and bake. When the pastry is nearly done, spread stoned cherries on it and sprinkle with sugar, or add applesauce and top with the following mixture: Beat 2–3 egg yolks until white with 2 spoons fine sugar, add 2 spoons very fresh sour cream, and fold in 2 beaten egg whites. Sprinkle on a teaspoon of wheat or potato flour and bake for a short time.
