Method

Mix together ¼ garnets, or 3 glasses, warm milk, ¾ glass yeast, 20 egg yolks, and 1 garnets flour. Let rise and then add ¾ glass clarified butter, 1 teaspoon salt, and ¾ glass sugar. Knead thoroughly and let rise a second time until the dough has nearly doubled in bulk. Turn it out onto the table, divide into long strips, braid each group of three strips like a woman’s plait, and place on a baking sheet. When the braids have risen, paint with egg yolk mixed with water, sprinkle with sugar and chopped almonds, and bake.
