Mix together 5 cups thick, fresh sweet cream and an equal amount of sour cream, add 2 cups boiled milk, and place in the oven for 10 hours. During this time the mixture must form curds. Pour everything into a napkin and hang the napkin in a cold place for the whey to drain off. Salt the curds, add 1 raw egg, and beat thoroughly until no lumps remain. Line a mold with a napkin, pile in the prepared cheese, and place a weight on top. When serving, add sugar to taste.
The above proportions are sufficient for a small mold. A large mold will re-quire 30 cups each fresh cream and sour cream, 12 cups milk, 6 eggs, and sugar.
