Add 1¼ glasses water to 1¼ lbs fine, sieved sugar and set the mixture on the fire to boil. Finely shred the zest of 1 lemon, add it to the syrup, and cook until the juice is as thick as if it were for jam. Remove the syrup from the fire, pour it into a stoneware bowl, and let it cool slightly. Add 1 zolotnik each ground cinnamon and cardamom, stir in 1½ lbs of the very best fine wheat flour, and knead for 2 hours. Prepare sheets of paper, sprinkle with flour, and place a flat cake of dough on each sheet of paper. After the cakes have baked, they may be iced as follows: Beat 2 egg whites and 1½ glasses sugar until the mixture whitens and thickens and add cinnamon oil or 1 or more spoons lemon juice, according to taste. Mix thoroughly, spread on the cakes, and dry out in the oven.
