Method

This is prepared exactly the same as raspberry jam, except that the green leaves should first be cut off carefully, leaving the stem ¼ vershok long. Dip each berry into spirits or white mm and arrange on a platter. Sprinkle on one quarter of the sugar and set the platter of berries on ice. The next day prepare a symp as follows: For every lb of berries use 1 glass water and 2 lbs sugar, boil thoroughly, sprinkle on the berries, and bring to a boil 3 times, each time removing the preserving pan from the fire and carefully skimming while shaking the pan. Finish cooking over a low fire until the berries lose their acidity and the symp begins to form a membrane.
