Method

Boil and cool 26 bottles of water. Pour the water into a large carboy and add ½ lb currant leaves, 6 lemons cut into small pieces (and seeded), about 8 lbs sugar, and 42 zolotniki cream of tartar. Shake all this thoroughly and keep it in the icehouse for 24 hours. Then set the carboy in the sun for 3 days, after which bottle, cork securely, and set on ice, where it should be kept until used.
