Method

Slice pineapples and pack into a jar, interspersing each layer with sugar so that the layers of sugar are thicker than the layers of pineapple. The bottom and top layers must both be sugar. After filling the jar, tie a bladder around it, tar thoroughly, and store on ice. In this manner, pineapples will keep completely fresh and will retain their aroma. Before using, a little cognac may be added to the jar, according to individual taste.
