Method

Clean the berries and squeeze out the juice, but do not rub them through a sieve. Weigh 1 lb of this juice and 1 lb sugar, pounded as fine as possible and sieved. Begin to mix with a spatula, in one direction only, without fail, adding the sugar gradually. After 2 or 3 hours, it will form a jelly just like one that has been boiled, but with an incomparably better aroma.
