Method

Gather whole bunches of barberries in late autumn. Pack into a jar and pour on boiled and cooled salted water. Tie up the jars. If mold appears, pour off the water and refill with a fresh batch of salted water. These barberries are used for garnishing dishes. They are also served with meats, instead of pickles. For 3 glasses water, use 9–12 zolotniki, or ¼ glass, salt.
