Bake thoroughly, peel off the skins, and pierce with a twig. Soak the chestnuts in a very thick caramel syrup (that is, boiled until golden) until they are saturated. Let the excess syrup drain off, lay the chestnuts on a baking sheet greased with very fresh, unsalted butter, let them dry out, and store in jars.
