One of the cornerstones of Mexican cuisine, salsa verde, a cooked tomatillo salsa, is an indispensable part of Beef Fajitas. It also goes well with anything Mexican, like the quesadillas and the Bluefish in Banana Leaves. The traditional way to cook the vegetables is by roasting them on a comal (a flat skillet), but you could also char them on the grill. Tomatillos are round green fruits that look like husk-covered green cherry tomatoes (actu
