• About 7 ounces (200 g) pine twigs, preferably new growth, but at Christmas we make do with ordinary branches

A splash of pine syrup is always lovely in a glass of sparkling water with ice, but poured over ice cream, drizzled over a trifle cake, or in a cocktail it can taste very Christmassy.

When you see the ideas on the next page, you’ll be making pine syrup until you’re ready to drop. So heavenly. It makes for a great gift, by the way: made from the tree . . . for under the tre
