Three-Coloured Plaited Bread

  • 500 g (1 lb/3⅓ cups) plain (all-purpose) flour
  • 300 ml (10 fl oz/ cups) lukewarm water
  • 2 tbsp olive oil
  • 1 sachet yeast (7 g/¼ oz/ tsp)
  • pinch of salt
  • 2 tbsp homemade! pesto
  • 8 sundried tomatoes in oil, finely chopped
  • 2 garlic cloves, crushed


Make the dough from the first five ingredients. Thoroughly knead for 10 minutes. Allow to rise for 1 hour in a warm place. Knead the dough again and divide it into three equal parts. Knead the pesto through the first part. Knead the finely chopped sundried tomatoes through the second part. Knead the garlic through the last part. Roll all parts into equal ‘sausages’ and braid them. Pinch the ends and brush the braid with a little beaten egg. Place the braid on a baking tray and allow to rise for at least 30 minutes.

In the meantime preheat the oven to 180°C (350°F/Gas 4). Bake the braid until done in approx. 35 minutes. The bread must sound hollow when tapped on the bottom.
