  • 500 g (1 lb/3⅓ cups) multigrain flour (whole-wheat flour is also good)
  • 300 ml (10 fl oz/ cups) lukewarm water
  • 1 tsp salt
  • 1 sachet yeast (7 g/¼ oz/ tsp)
  • 100 g (approx. 4 oz/½ cup) raisins or mixed dried fruit
  • 100 g (approx. 4 oz/½ cup) nuts, pumpkin seeds (pepitas), sunflower seeds
  • a mixture of crushed oat flakes and bran to garnish


Make the dough from the first four ingredients. Knead for 10 minutes on a floured surface. Allow to rise for an hour in a warm place covered with plastic wrap.

Knead again and fold in the raisins, chopped dried fruit and nuts. Divide the dough into approx. 12 balls, place on a greased baking tray and cover with plastic wrap. Leave to rise for 30 minutes.

Preheat the oven to 180°C (350°F/ Gas 4). Wet the tops and sprinkle with oat flakes. Bake until golden brown, (approx. 25 minutes).
