Thyme, Verbena & Tarragon Tea

If you have access to fresh verbena, this tea is highly recommended. It also works well with dried verbena. But do use fresh tarragon and thyme.


  • 25 g (approx. 1 oz) fresh verbena or 1 tbsp dried verbena
  • 15 g (½ oz) fresh tarragon (few leaves)
  • 15 g (½ oz) fresh thyme (small sprig)


Bring 1 generous litre (4 cups) water to a boil with the spices and remove from the heat. Allow the tea to brew for 10 minutes before pouring it. Add honey, to taste. You can also sweeten the tea with honey and leave it to fully cool, serve over ice cubes on a hot day.
