Gingerbread Muffins

Ingredients

    Combine in a bowl

  • 125 g (4 oz) butter
  • 125 g (4 oz/approx ½ cup) sugar
  • 2 eggs
  • 125 g (4 oz/approx 1 cup) self-raising flour
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp mixed spice
  • A pinch of salt & 50 ml ( fl oz/¼ cup) milk

    Mix the icing in another bowl

  • 375 g (13 oz/3 cups) icing (confectioners’) sugar
  • 1 tsp vanilla extract zest & juice of ½ lemon

Method

packs cream cheese (250g/8 oz) at room temperature

Preheat the oven to 200°C (400°F/Gas 6)

Grease muffin tray or line with paper cases

Bake the muffind for 15-20 mins until light brown leave to cool

Carefilly spread the icing on you muffings, sprinkle with cinnamon and serve with a cup of tea
