  • 150 g (5 oz/ cups) almond meal (or shaved almonds)
  • 150 g (5 oz/1 cup) plain (all-purpose) flour
  • 180 g (6 oz/ sticks) butter, melted
  • 150 g (5 oz/ cup) caster (superfine) sugar
  • 6 egg whites
  • pinch of salt
  • 12 small cooking apples, but 12 chunks of any apple, pear or other fruit is also fine. Leave the peel, it looks good!

And also

  • butter for greasing purposes


Combine all ingredients for the batter, except the apples. Grease 12 muffin moulds. Distribute the batter in the moulds. Press the apples into the moulds and bake the muffins for 40 minutes in an oven preheated to 160°C (320°F/Gas 3) until golden brown and done.
