This is a quick recipe for crostini or just toasts. Carefully select the bread you will be using. Good sourdough bread makes a very different toast from brioche bread. You can vary the spices and garlic or just use nothing at all. From an average baguette you will get approx. 40 thin slices of bread.

  • 200 ml (6 fl oz/¾ cup) olive oil
  • garlic, oregano, thyme, rosemary, ground paprika as desired or to taste
  • freshly ground pepper and salt
  • 1 baguette or other bread

Combine the olive oil, salt and pepper and garlic and any other spices. Arrange the bread slices on a baking sheet. Spread with the olive oil mixture. Bake for 5 to 10 minutes in an oven preheated to 180°C (350°F/Gas 4), turn over halfway through. Leave to fully cool before filling. Can be stored for at least one month in an airtight bag.
