This is my all-time favourite soup. The recipe was given to me by friend Claartje and i still make it often, This is the basic recipe, just add whatever you have available or leave it as it is. Use high-quality olive oil


  • Sauté 1 onion in plenty of olive oil until soft.
  • Add 1 Garlic clove, freshly crushed
  • 2 × 400 g (14 oz) cans of peeled tomatoes
  • A dash of vegetable stock or broth, chilli to Taste & 2 handfuls of old bread, cut into coarse chunks.
  • Leave to grntly simmer for 30 mins.
  • Add 1 zucchini (courgette), cubed.
  • Leave to cook for a further 10 minutes.
  • And add salt & pepper to taste.
  • Serve in large bowls
  • Splashed with olive oil.
