  • Score the fat laved of 1 duck brest fillet crossways.
  • Fill half a tray with salt
  • Grate the rind of 1 or 2 oranges, sprinkle on the duck brest
  • Place the duck brest in the salt & top with more salt until fully covered.
  • Cover the tray and place a heavy object on it. Store in a cool place
  • Wait 2 days
  • First rinse the meat thoroughly, pat dry and cut into very thin slices using a sharp knife


Be creative serve on a salad, on soup on top of risotto ...
