Hmm. I’m willing to bet that you are always left with cooked gnocchi.

No problem. They can be used in a salad. Make a creamy dressing and complement the salad with crunchy vegetables.


Make the Dressing from

  • 75 ml ( fl oz/ cup) white wine vinegar
  • 60 g (2 oz/¼ cup) sour cream
  • 1 tsp mustard
  • 1 tsp sugar, or a little more
  • 1 tbsp parsley, finely chopped
  • 1 garlic clove, crushed
  • freshly ground pepper and salt
  • approx. 200 ml (6 fl oz/¾ cup) olive oil


Make the salad from blanched vegetables green asparagus, garden peas, broad beans or green beans

(coarsely cut) raw vegetables little gem (romaine/cos) lettuce, spinach leaf, watercress, radicchio, rocket (arugula), tomato, spring onion (scallion) rings, grated zucchini (courgette) or herbs

meat or fish roasted sardines, parma ham, smoked salmon, smoked bacon, chicken.
