Method

  • 1 generous handful of chopped fresh garden herbs: tarragon, chives, basil, parsley
  • 2 shallots, diced
  • 2 garlic cloves, coarsely chopped
  • 2 tbsp (white) balsamic vinegar
  • pinch of salt
  • 1 tbsp. peppercorns from the mortar
  • 100 ml (approx. 3 fl oz/½ cup) olive oil
