White Cabbage Salad with Cumin

A remarkably simple but fun salad for all seasons.


For the Salad

  • 1 quarter white cabbage, very thinly sliced, using a mandolin or in the food processor
  • 1 bunch watercress, leaves only, or rocket (arugula) salad, or dandelion leaf (used here)
  • 1 large bunch mint, leaves only
  • 2 tbsp cumin seeds, roasted

For the Dressing

  • 1 garlic clove
  • 1 tbsp cumin seeds, roasted
  • juice of 1 lemon
  • freshly ground pepper and salt
  • 150 ml (5 fl oz/ cup) grape seed oil or other light vegetable oil


Combine all ingredients for the salad. Add the first four ingredients for the dressing in a tall container and purée until smooth. Pour in enough oil to create a creamy dressing. Pour over the salad and leave to stand so the flavours infuse.
