For the Dressing

  • 100 ml (approx. 3 fl oz/½ cup) walnut oil
  • 1 shallot, diced
  • 3 tbsp red wine vinegar
  • salt and pepper
  • 400 g (14 oz) green beans
  • 75 g (2½ oz/½ cup) walnuts


Make the dressing by beating the oil in a thin trickle through the other ingredients, except the beans and walnuts. Bring a large pan with salted water to a boil. Blanch the beans for approx. 5 minutes, until cooked al dente.

Drain in a colander over the sink. Toast the nuts briefly in a dry frying pan.

Place the beans in a serving dish, top with the dressing and sprinkle with walnuts.
