These are variations on the cheese I made.


  • Before straining the cheese, stir a handful of chopped thyme, chives, nettles or parsley through it.
  • Add 2 tbsp briefly roasted coriander seeds to the curds.
  • Add 2 tbspherbes de Provence’ to the curds.
  • Add 2 chopped jalapeño peppers or harissa to the curds.
  • Add 1 tbsp crushed black pepper and 1 tbsp roasted mustard seeds to the curds.


Finish the cheese as described. Serve topped with (spicy) olive oil and a little sea salt, ground paprika or cayenne pepper.
