Making Ice Cream

Making ice cream is easy without a machine. Even if you need to make a lot. An ice cream log such as this one is a solution. I will make a very simple one here. It is up to you to do something with it, for example, you can add nuts, raspberries or chocolate shavings. You don’t have to make a mocha flavour as I demonstrate here. Create your own.

In the following pages, I will give you some variations. You can also use half milk/half cream, for example, If you don’t want your ice cream to be too rich. But oh well, I do like it Creamy. >>> By the way, do not add alcohol if children will be eating it, but that goes without saying.


  • Prepare

    6 egg yolks, 200 g (1 cup) sugar, 150 ml (1 cup) strong coffee, 3 tbsp. Coffee liqueur, 600 ml (2 cups) cream, chocolate chunks.

  • Beat the yolks and sugar into a white foam.

  • Add the coffee and a third of the cream. Stir well into a smooth sauce.

  • Pour the sauce into a saucepan...

  • And bring to a boil while stirring,

  • Until the sauce thickens and sticks to the spoon, like so.

  • Leave the custard to cool, I put it in an open window

  • In the meantime whip the rest of the cream.

  • Fold in the cooled custard and the liqueur (optional!).

  • Line a mould with plastic wrap.

  • Pour in the mixture and cover. Neatly.

  • Freeze for at least 5 hours.

  • Meanwhile melt a little chocolate over a bain-marie.

  • Pour into a piping bag, cut the tip and decorate it alone.
