Vin Santo Zabaglione with Pink Grapefruit

  • 3 pink grapefruit
  • 3 tbsp sugar
  • 2 eggs
  • 4 tbsp Vin Santo (Italian dessert wine or another sweet dessert wine)


Place a grapefruit on a chopping board. Using a sharp knife, peel the yellow skin and also the white pith from top to bottom. Proceed until the entire grapefruit is peeled. Over a bowl, remove the pulp between the sections, the juice will be collected in the bowl. Repeat for all grapefruit and stir a tablespoon of sugar through the juice with the grapefruit sections. Set aside. Beat the eggs, the remaining sugar and wine with a mixer into a foamy mass in approximately 5 minutes. Arrange the fruits in four attractive glasses, cover with the zabaglione and serve immediately!
