Rose Tea Marshmallows

For this recipe you will really need a food processor with a whisk or a hand blender and lots of patience

Ingredients

To fill a baking sheet you will need

  • 3 leaves/or tsp gelatine powdered gelatine
  • 250 ml (8 fl oz/1 cup) rose petal tea (... or regular tea of course!)
  • 500 grams (16 oz/ cups) granulated sugar
  • 150 grams (5 oz/just under ½ cup) Golden syrup (thick sugar syrup)
  • pinch of salt drop of pink food coloring

Method

  1. Soak the gelatine leaves in cold water (or dissolve the powdered gelatine in a tbsp of warm water)
  2. Bring the tea, sugar syrup and salt to a boil. Simmer for about 7 mins until it forms a thick syrup.
  3. Squeeze the gelatine leaves, place them in the food processor and blitz on medium speed or add the dissolved gelatine mixture to the food processor.
  4. Pour a thin trickle of hot syrup onto the mixture. If it turns whiter, the prosessors’ speed can be increased. Keep on blitzing into thikc white form & until the bowl feels lukewarm. This takes 15 minutes! add the coloring.
  5. Grease a sheet of baking paper. Place on a serving tray and spread the mixture on it: 2 cm or ¾ inch thick.
  6. Leave to dry for 8-12 hours. Cut into squares or cut out shapes.
